We frequently end up with a bunch of stuff left over in our vegetable bin after the week, and tonight I ended up with a surprisingly good salad, using only week old veggies, and no lettuce. Super easy, everything was local and abundent this season, so surprise your significant other and enjoy!
4 small bok choy
4 small red lady apples
1 fennel bulb
favorite dressing (we used italian)
Old bread croutons to taste
1. Cut the ingredients into bite-sized pieces, mix with the dressing, and serve.
