Recipe: Lentils with Pea shoots

Surprisingly good mix I wanted to remember.  Lentils are always good and different, lots of protein, and peas are a great flavor for them.  Pea shoots are surprisingly good here – greens and pea-like to boot, and this time of year the farm sends tons of them over that we didn’t know what to do with.

1/2 pound Brown lentils

10 Cherry Tomatoes

1 Red onion

2 Carrots

2 Celery

Pea Shoots



Spices (Bay Leaf, Cardammon Seed, Coriander,Nutmeg, Garam Masala, Tumeric, Paparika, Celery Seeds, Red Pepper)

Salt and pepper to taste

  1. Cook in oil, onion, carrots, celery, garlic, ginger.  Then add lentils and tomatoes and cover with water.
  2. Add spices, cover and cook for 30 minutes, till water is gone.
  3. Serve over uncooked pea shoots while hot.
