Surprisingly good mix I wanted to remember. Lentils are always good and different, lots of protein, and peas are a great flavor for them. Pea shoots are surprisingly good here – greens and pea-like to boot, and this time of year the farm sends tons of them over that we didn’t know what to do with.
1/2 pound Brown lentils
10 Cherry Tomatoes
1 Red onion
Spices (Bay Leaf, Cardammon Seed, Coriander,Nutmeg, Garam Masala, Tumeric, Paparika, Celery Seeds, Red Pepper)
Salt and pepper to taste
- Cook in oil, onion, carrots, celery, garlic, ginger. Then add lentils and tomatoes and cover with water.
- Add spices, cover and cook for 30 minutes, till water is gone.
- Serve over uncooked pea shoots while hot.
